Installation Requirements for New Facilities


All new or newly-remodeled food service facilities (FSF) inside the KUB wastewater service area will be required to install an approved, properly operated, and maintained grease trap/interceptor.

 

Requirements for Existing Facilities


All existing FSFs inside the KUB wastewater service area are expected to conduct their operations in such a manner that grease is captured on the user's premises and then properly disposed of.

  • KUB will periodically inspect each FSF on an as-needed basis to ensure that each facility is complying with the intent of the KUB Grease Control Program.
  • Through preventive maintenance records and emergency calls related to grease, KUB will identify and target "grease problem areas" in the wastewater collection system. FSFs located upstream of these areas that discharge their wastewater into the "problem" lines will be identified as potential contributors to the grease build-up.
  • All FSFs in the vicinity of the problem area will be inspected. Each facility's grease control practices and the adequacy of their grease control interceptor/equipment will be assessed. Maintenance records may also be reviewed.

 

Post Inspection Phase


Following an inspection, KUB will send written notice of the results to each FSF, including a grease control educational brochure and a summary of the KUB Grease Control Program. The inspection will typically result in one of the following actions:

  • Facilities equipped with an appropriate and adequately-sized grease interceptor that are meeting the intent of the KUB Grease Control Program through effective grease control practices will be commended for their compliance.
  • Facilities may be required to develop and submit to KUB a plan designed to achieve compliance through improved housekeeping and increased maintenance and pumping of the existing grease interceptor/equipment.
  • Facilities that are not successful in achieving compliance with the intent of the KUB Grease Control Program through improved housekeeping and increased maintenance and pumping on the existing grease interceptor/equipment will be required to install the necessary interceptor and/or equipment to bring the facility into compliance. An appropriate amount of time will be agreed upon between KUB and the FSF.

 

Design Criteria


Unless otherwise approved in writing by KUB, grease interceptors will be constructed in accordance with KUB's standards and will have a minimum of two compartments with fittings designed for grease retention. [See Diagram 1]

 

Grease Interceptor Maintenance or Pumping


The user at the user's expense will maintain all grease interceptors. Interceptors/traps must be pumped out completely a minimum of once every three months, or more frequently as required by KUB, to meet the intent of the Grease Control Program.

 

Enforcement


KUB will have the administrative authority to enforce this program. Whenever KUB finds a user has violated or is violating the intent of the program, KUB will initiate corrective actions spelled out in the Grease Control Program document.
